I have not heard of rice bubbles before. What are they, and where can I get them? I assume they make the chocolate balls crunchy???
Hi all, on the theme of peanut butter, here is a great recipe that is great for gifts, special treats and festive seasons. They are really rich but yummy

. They look really great boxed up with clear cellophane and ribbon for a great present.
I don't really measure the ingredients so here is how I do it. Place about a cup of peanut butter into a bowl, add in about a 1/4 cup of rice bubbles and mix. Then mix in enough icing sugar to make the mixture form a soft dough. It should not be sticky and abled to be rolled by hand making small balls (use a teaspoon). Set in the fridge for about 30mins. Melt some good quality dark chocolate and dip the chilled balls one at a time in the choc until well coated. Use a fork to fish the ball out and place on a tray to set.
If you want to be fancy melt some white chocolate and drizzle a little over the balls to decorate. To make a simple piping bag and to melt chocolate use a zip lock bag. Place the choc bits into bag and zip it up. Place bottom of bag into a bowl of hot water (on the bench) and let it sit until melted. When ready to use snip a little bit off the bottom corner of the zip lock bag and use it in the same way as a piping bag. (Tip: don't put too much choc in the bag or it will burst!) No washing up just throw into the bin. I hope you enjoy!Sam

Hi Elleth, I think they call them Rice Krispies??? As Karen said they are crunchy puffs of rice. These are very yummy you won't be able to stop at just one!!
