Low-Carb Crustless Quiche

Description This low-carb quiche is safe for all phases of the Atkins diet.

  • 10 Eggs, Slightly Beaten
  • 2 cups Diced cooked turkey, chicken, beef, or ham
  • 1 cup heavy cream
  • 1 cup grated hard cheese, such as cheddar
  • 2 Chopped Green or Red Peppers
  • 2 tbsp Onion Flakes
  • 2 tbsp Dried Chili Pepper Flakes
  • 2 tsp Parsley
  • 1 tsp Oregano
  • 1/2 tsp Garlic Powder
  • 1/2 tsp chives
Methods/steps
  1. Preheat oven to 350 Farenheit
  2. Beat eggs lightly
  3. Stir in remaining ingredients except a few chives and 1/4 cup cheese and blend well.
  4. Pour into pie pan greased with butter or Pam
  5. Sprinkle remaining cheese and chives on top
  6. Bake at 350 for 30 minutes
Additional Tips
Cut into wedges. You can serve hot or cold.

For variety, change out the peppers and chili pepper for other vegetables such as spinach.
